it's a red wine crafted by a Hong Konger who ventured to a vineyard in Bordeaux, walked through the entire vineyard to select the grapes, handpicked each cluster of grapes and chose barrels to make his own red wine. And thus, emerged a wine named "Hong Kong". And this winemaker happens to be the owner of Easy Wine.
As this wine is entirely handpicked and crafted, with an annual production of only 300 bottles, it has always been part of the owner's private collection.

This wine is made from 100% Merlot originating from Cotes de Blaye, right bank of Bordeaux. A themed label has been assigned to each vintage to demonstrate the story of that year.

FREEDOM Catalonia Sparking NV

The winery producing FREEDOM is located in Catalonia. It turns out they held a referendum in 2017, and in commemoration, the winery specially crafted this FREEDOM sparkling wine. The owner also took note of the situation in Hong Kong. After communication, the owner decided to specially print "Hong Kong Add Oil" and the Catalonia flag on the back label of our wine bottles, letting the people of Hong Kong know that we are not alone.

The original first batch of FREEDOM was a CAVA sparkling wine. However, after the winery produced the first batch of FREEDOM, they received notice from the Spanish Ministry of Agriculture that they were not allowed to use CAVA (Spanish sparkling wine) to produce FREEDOM anymore. But like us, the winery felt that this wine was very meaningful and couldn't allow it to stop production. After lengthy negotiations, the winery decided to replace it with another sparkling wine produced in Catalonia on par with Cava quality and also made from Parellada, Macabeo, and Xarel-lo grapes. Therefore, FREEDOM can finally be properly named "Catalan Freedom Sparkling NV". Truly, it is a sparkling wine born in Catalonia to support Hong Kong

FREEDOM Bordeaux Superieur 2019(HK Edition Memorable)

A red wine specially crafted by a French winery in Bordeaux to commemorate Hong Kong in 2019. It was a heartbreaking year for Hongkongers, and not just for them, many international friends have been closely following Hong Kong's situation. Julien Bonneau, the owner and winemaker of a winery on the right bank of Bordeaux,France, often travels to Hong Kong due to trade relations. He deeply felt the experiences of Hong Kong in 2019. When he learned that we encountered FREEDOM sparkling wine in Catalonia, he felt that this FREEDOM wine was very meaningful, as it was specially crafted to commemorate Catalonia's referendum. "Why not make one for Hongkongers?" This thought led Julien to personally select grapes and barrels, crafting this FREEDOM red wine to commemorate Hong Kong in 2019. Because of this shared vision, wineries from different countries and regions are connected, creating this "FREEDOM Collection".

This red wine began with grape harvesting in autumn 2019 and has now been completed in 2021. Because it must be made from grapes harvested in 2019 to bear the vintage year "2019" on the bottle, FREEDOM Red Wine 2019 will forever be limited to 2000 cases.

The vintage is a mark of history. In an age where history can be arbitrarily altered, we must never forget everything that happened in 2019. While the environment may become darker and the sense of powerlessness may grow, at least we must properly record the pain of our city. Hopefully, when the day comes, and our next generation asks about the story of this wine, we can tell them the truth

香港2013，2014，2015一枝香港人自己釀制的紅酒

這是一款由一位香港人精心打造的紅酒，他遠赴波爾多的一個葡萄園，走遍整個葡萄園挑選葡萄，親手採摘每一串葡萄，並選擇酒桶釀製自己的紅酒。於是，誕生了一款名為「Hong Kong」的紅酒。這位釀酒師正是Easy Wine的主人。

由於這款酒完全是手工挑選和釀製的，每年僅生產300瓶，一直是主人私藏的珍品。這款酒由100%來自波爾多右岸布萊伊丘（Cotes de Blaye）的梅洛葡萄釀製而成。每個年份都有一個主題標籤，以展示該年份的故事。

在2019年，在一位手足離開我地的當日，我地嘅品酒師係西班牙一個小鎮見到呢枝酒（當時並沒有”香港加油”back label)，醉貓深受感動，決定親自聯絡酒莊莊主，了解此汽酒FREEDOM的故事。FREEDOM氣酒嘅酒莊位於Catalonia，原來她們曾在2017年進行公投，酒莊莊主隨後為紀念此事，而特別釀製出呢枝汽酒FREEDOM。莊主亦有留意香港的情況，經過多番溝通後，莊主決定特登為我們在酒瓶後印上”香港加油”及Catalonia旗的Back Label，讓香港人知道，我們 並不孤單。

原本的第一批FREEDOM為CAVA氣酒，但當酒莊生產左第一批FREEDOM後接到通知，西班牙農業部門不容許酒莊再用CAVA（西班牙氣酒)來生產FREEDOM。

但酒莊同我哋一樣，覺得呢枝酒好有意義，唔可以俾佢停產，經過長時間嘅協商，最後酒莊決定以另一款同是生產於Catalonia，質素相近CAVA的Sparkling Wine 來替代。故此，FREEDOM終於可以正名為”自由加泰羅尼亞氣酒”

真真正正係一枝Catalonia為支持香港而生產的氣酒

 此氣酒最佳儲存溫度為12至16度，存放在陰涼處，避免太陽直接照射

如果放雪櫃的話，因為怕cork會變乾，最好半年內飲用

一枝法國酒莊特別為紀念香港2019年而釀製的紅酒 2019年，係香港人十分痛心的一年。除左香港人，好多外國朋友都一直關注香港的情況。法國右岸酒莊莊主兼Winemaker Julien Bonneau，由於貿易關係，經常需要來往香港。對於2019年香港的經歷，Julien也表示感受很深。當佢知道我地品酒師係Catalonia遇上FREEDOM汽酒後，佢覺得呢枝FREEDOM汽酒很有意義，因為係特別為紀念Catalonia公投而釀造的。”Why not make one for Hongkongers?” 就係因為呢個諗法，Julien親自挑選提子及木桶，為紀念香港2019而釀制出呢枝FREEDOM紅酒。因為理念一致，不同國家、不同地區的酒莊connect在一起，成就了這個”FREEDOM Collection”

呢枝紅酒由2019年秋天開始採摘提子，至今天2021年，終於釀製完成

由於必須要用2019收割的提子釀製而成的酒，才可在酒瓶上印上”2019”，因此，FREEDOM紅酒2019永遠都只會有2000箱。

年份，就係一個歷史印記。身在一個歷史可以被任意篡改的年代，我們絕對不能忘記2019發生過的所有事。可能環境會越來越黑暗，感受越來越無力，但至少我們要好好地紀錄着我城的傷痛。希望當有一天，我們的下一代問起這枝酒的故事時，我們都可以講出真相
